About my passion, black and white color & food

Since my childhood I loved to watch old black and white movies. Later I changed to photography. I couldn’t get enough of black and white. During my studies in university I dedicated my time to documentary photo essays , as a student I had plenty of time. Time became pressios after my graduation and I photographed occasionally.
My life changed, after a spontaneous food trip in Toscani and since that week I haven’t stopped cooking. I started to be interested in home cuisine and a family history which comes hand in hand with the food. Wanting to please close family and friends with food became my fetish. I love simple cuisine, quality ingredients which are the same as food porn from Thomas Keller and the food he serves in the book French Laundry.

Marinated feta
I love salads, especially since I have some digestive problems which occurred few months ago.I experiment with dressings and sometimes I find crazy combinations which with all the respect to the author end up in the toilette. Cuisine of India has showed me the intensity of heated spice and marinade preparation. A marinade with the taste of east can perfectly refresh my salad.As a boy I used to travel with my parents to Greece, I was addicted to feta, tomatoes with onions and olive oil. Taste of good feta which contains minimum 70% of goat cheese (the rest sheep cheese) is intense and quite salty. On the market, we can find a lot of „Greek“ cheese which are almost like feta. Apropos, feta produced in Greece cover only Greek market and inland use. Products you can buy out of Greece are in real produced in Denmark where Greeks established a production aimed to export.

I will never forget the street market in Greek city Molyvos where in the small street under the fortress we found a local vendor of feta – he sold it from a goat skin. He offered passing people a sample but no-one wanted to try. I was lucky I tried the best feta in my life! My hunger for new taste sometimes brought me to shameful toilet or side road positions but I regret nothing. The same as the Slovak hip hop song says: „I don’t regret“ ( that’s all from my connection to Slovak hip hop). I am not a member of a food sect but I always advise people to taste everything. You can have big fun with the food. Try to marinate good Greek cheese and experiment with spices.

extra virgin olive oil
feta cheese
Kari
½ ss fennel
½ ss cumin
½ ss mustard seeds
Chilli peppers (if you like)

In the pan pour 1.5 dcl of oil. On the simmer heat the oil and add spices + chilli. Heat until you can smell the ingredients. Take the pan of the heat and leave to cool down. Put the chopped feta in the glass and pour oil all over the feta until drawn. If you don’t have enough oil you can use a fresh one and add to the glass. In case you will serve a salad add some chopped leaves of basil. In case you will prepare a warm salad you can use a combination of lentils and marinated feta with basil.
